這個 PR 做了什麼

將 iOS dSYM ZIP 改存於 IPA 所在的 workspace，避免 upload-artifact 因同時收集 workspace 與 $RUNNER_TEMP 的檔案而在下載結果中保留 _temp 目錄。

先前 Publish job 使用 artifacts/* 上傳 GitHub Release assets，會誤將 artifacts/_temp 目錄交給 gh release create，因而出現：

尚未實際執行完整 Release workflow；合併後由下一次 snapshot 發布確認 GitHub Release assets 正常上傳

  —— commit 訊息就是更新日誌，格式見 commit.md
• 一個 commit 一件事（這條 gate 驗不了，靠自己和 review）

  深色模式看過，文字對比度可接受
