Support IAM profile authentication for Redshift

I am trying to use sqlmesh over a Redshift dbt project with IAM authentication in the connection profile

Error: 1 validation error for RedshiftConfig

  Field required [type=missing, input_value={'name': 'dev', 'profile_...True, 'database': 'dev'}, input_type=dict]
    For further information visit https://errors.pydantic.dev/2.6/v/missing

Also seeing issues with Redshift and IAM Auth. Config validation rejects db_user which is a required field for IAM.

gateways.redshift.connection.db_user
  Extra inputs are not permitted [type=extra_forbidden, input_value='my_db_user', input_type=str]
    For further information visit https://errors.pydantic.dev/2.10/v/extra_forbidden```

I fixed this in #5687
It's my first contribution ever, so I hope everything is done right :)
