Fixes the 38 CVEs the nancy scan reports: golang.org/x/crypto v0.50.0 -> v0.58.0 (16 findings) golang.org/x/net v0.53.0 -> v0.62.0 (14 findings) golang.org/x/text v0.36.0 -> v0.43.0 (2 findings) golang.org/x/sys v0.43.0 -> v0.49.0 (1 finding) github.com/go-jose/go-jose v4.1.4 -> v4.1.6 (2 findings) The updated modules require Go 1.26, so the go directive moves to 1.26.0 and the workflows and Dockerfiles pin Go 1.26.10.

The nancy dependency scan (once it could authenticate) reported 38 CVEs. This updates the five affected modules to their patched versions:
