Adds dated 1.0.0 (2026-11-06) release sections across package CHANGELOG.md files to document the latest SDK behavior.

launchdarkly-ai-python and launchdarkly-ai-server each gain an Experimental entry for a new shadow_config wrapper around shadow requests. All message-provider packages (claude, openai, langchain, litellm) record a feature adding max_retries to their messages handler factories, mirroring the core/server packages.

launchdarkly-ai-server additionally documents evaluation changes that return tool errors to the model and mark evaluation spans for viewers, plus a client bug fix so concurrent first init_client calls share a single initialization attempt.

This PR only updates changelogs; it does not modify runtime code.
