ci: drop the pixi-version versioning override

Removes the prefix-dev/pixi package rule that switched setup-pixi's pixi-version input to semver versioning. Renovate fixed this upstream in renovatebot/renovate#46864, which makes semver the built-in versioning for that input. The fix shipped in Renovate 44.152.0, and the Mend App has run 44.155.2 or later since 2026-10-13, so the rule no longer changes anything.
